  2. Unlock D64 entry door

  3. Turn on lights:

    1. Tasting room overhead lights - dim them.​

    2. Under bar light - remote in cash box.

    3. Bottle Shop sign - remote in cash box.

    4. Bottle lights - remote in cash box.

  4. Turn on music, record player to spin, and TV for camera (remote in cash box)

  5. Put up any dishes that were dried the night before.

  6. Place bar mats on bar.

  7. Organize bar to your preference for service, including filling the speed rail with syrups.

  8. Prepare 3 compartment sink and fill bar spoon tin with sanitizer and spoons.

  9. Place menus on tables and bar including any promotional print items.

  10. Fill up ice cart. (Check freezer in back for bagged ice if ice machine ice is spitting out sheets instead of cubes)

  11. Fill up water dispenser.

  12. Setup Slush machine. Steps are below, scroll to bottom.

  13. Place fruit in bowl (lemons, oranges, and limes).

  14. Prepare garnishes:

    1. Lime wedges​

    2. Lemon wheels

    3. Orange wheels

    4. Lime and lemon twists

    5. Raspberry skewers

  15. Check syrups, cocktail flight bottles, and juices are filled enough for service and are within labeled date

  16. Unlock building's front door.

  17. Place signs out front of building front door and lobby entrance.

  18. Put out the D64 light when it's dark enough (don't forget to take a pen)

setting up the slush machine

  1. Place tap cover over tap handle (it pushes on).

  2. Life up the handle on the top rear of the machine.

  3. Slide the canister in place and pull handle down to lock.

  4. Fill reservoir from the top opening flap up to the fill line. Recipes are below.

  5. Press power button. The machine goes through a power up cycle for 600 seconds.

  6. Once countdown is complete, press the M button until Spiked Slush is selected.

  7. Press the LARGE snowflake icon repeatedly until all the lights in that vertical segmented bar are lit. (max cold)

Recipes:

Blue Razz Slush

  • 75oz water

  • 15oz silver rum

  • Blue Raspberry Koolaide Powder to the two quart line on measuring cap + an additional fill up to the 1 quart line.

 

Note - this makes more than the machine can hold. 1 liter will be left over. Store in fridge, covered, with a label.
