  1. Lock cash drawer

  2. If Saturday

    1. Throw out all cut fruit​

    2. Pick up menus/promotional items and place under water dispenser shelf

    3. Empty water dispenser

  3. Wash and sanitize all used dishes including:

    1. Cocktail glasses, flight boards, and shot glasses​

    2. Food dishes and silverware

    3. Barware, pour spouts from bottles, ice scoop, empty syrup containers, garnish bins, and bar mats

    4. Dump buckets

    5. Measuring cups and food prep items

  4. Cork liquor bottles and place in speed rail

  5. Throw away opened 1 time use mixers (Coca-Cola cans, ginger beer, tonic, etc.)

  6. Spray down and wipe tables and bar top

  7. Put away any containers on the bar work area (refrigerated items)

  8. Wash bar mats and hang to dry

  9. Spray down and wipe bar work area

  10. Spot sweep

  11. Empty ice cart and leave lid open to dry

  12. Move all sanitized dishes from the sink to drying cart/bar top on rags

  13. Drain 3 compartment sink

  14. Place any used rags/towels in laundry basket

  15. Put away signs (outside sign and lobby sign) and bring in D64 light

  16. Lock building's front door

  17. Put D64 light and iPads on chargers

  18. Turn off music, record player, TV, and lights

  19. Take out both trash bags

  20. Lock D64 entry door

  21. Clock out
